Delicious Spring DIY snacks

Spring is upon us, and with the weather is getting warmer, you may be looking for a nice refresher or something to munch on.  Here are a few spring goodies that can be fun and easy to make.

Strawberry Lemonade in Mason Jars:

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 1 ¼ cups fresh lemon juice (from about 6 lemons)
  • 1 pint strawberries, sliced
  • 24-28 oz cold water
  • Ice

Directions:

  1. Start by bringing the sugar and water in a small pot. Stir until the sugar melts completely then remove it from the heat and let it cool to room temperature.
  2. Next, place the strawberries in a blender and process until it’s smooth. Pour the strawberries in the sugar and stir well. After, add some lemon juice.
  3. Combine the strawberry lemon syrup and the cold water in a large pitcher. Stir well and add lots of ice.
  4. For extra effect, try serving the lemonade with thin slices of lemons or strawberries.

Watermelon-Kiwi-Popsicles

Watermelon Kiwi Popsicles

Ingredients:

  • 3 cup watermelon cut into cubes
  • 2 kiwis peeled and cut into cubes
  • 18-24 Raisins (optional)

Directions:

  1. Puree kiwi in blender until it’s liquefied.
  2. Transfer to pouring container.
  3. Puree watermelon in blender until liquefied.
  4. Transfer to pouring container.
  5. If looking to make it a tad sweeter, try adding sugar or honey.
  6. Pour watermelon juice in popsicle molds or small paper cups about ⅔ full.
  7. Add a handful of raisins to simulate seeds (optional)
  8. Place in freezer for 10-15 minutes or until mixture begins to firm.
  9. Insert the sticks.
  10. Pour kiwi juice in popsicle cups to fill.
  11. Place back into freezer for a few hours.

Mini Sugar Cookie Fruit Pizzas

Ingredients for sugar cookies:

  • ½ cup butter
  • ½ cup shortening
  • 2 cups sugar
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • 3 egg yolks
  • ½ teaspoon vanilla
  • 2 and ½ cups all-purpose flour

Ingredients for cheesecake spread:

  • 1 (8 oz) package cream cheese, softened
  • ½  powdered sugar
  • 1 cup heavy cream
  • ½ teaspoon vanilla
  • Fresh fruit for topping the cookies. Try using; raspberries, blueberries, kiwi and mango.

Directions:

  1. Start by preheating the oven to 300 F. Get a bowl and beat the butter and shortening. Cream in the sugar, baking powder and salt until fluffy. Add the eggs and vanilla and mix well. Then stir in the flour.
  2. Roll the dough into 1 inch balls and place on a baking sheet. Bake for 12-14 minutes. Do not let them get brown. Let them cool on the baking sheet for 2 minutes. Remove from the tray and let them cool completely.
  3. Meanwhile, make the cheesecake spread. Mix the cream cheese with the sugar until light and smooth. Pour it in the heavy cream. Begin the mixer on slow speed, start to mix in the cream. Increase the speed of the mixer gradually until it is mixed.
  4. Spread the cookies with a bit of the cream cheese and top with fresh fruit.
