St. Patty’s Day Treats

Two easy, sweet, and very green treats to celebrate St. Patrick’s Day with!

 

Chocolate Mint Brownies: 3 layer brownies (fudgy brownie, mint filling, chocolate glaze)

  • Brownie layer

    • Box brownie mix (water, vegetable oil, egg)

or

    • Your favorite brownie recipe

  • Mint filling layer

    • 2 ½ cups of powdered sugar

    • 3 tbsp. butter (softened)

    • 3 tbsp. whipping cream

    • 2 oz. cream cheese (softened)

    • ⅛-¼ tsp. mint extract

    • 2 drops of green food color

  • Chocolate Topping

    • ⅓ cup whipping cream

    • 1 ⅓ cups semisweet chocolate chips

    • ⅓ cup butter

Directions:

1. Preheat the oven to 350 degrees. Grease the bottom only of a 9-inch square pan. Prepare and bake the brownies as directed on the recipe. Allow the brownies to cool for at least an 1 ½ hours.

2. Combine powdered sugar, butter, whipping cream, cream cheese, mint extract, and food coloring in a large bowl. Using an electric mixer, mix until smooth. Spread the filling on the cooled brownies. Refrigerate until set about 1 hour.

3. In a 2-quart nonstick sauce pan over low-medium heat combine whipping cream, chocolate chips, and butter. Stirring continuously until completely melted and smooth. Wait until the topping is lukewarm, about 10 minutes.

4. Pour the lukewarm topping over the filling. Allow the bars to set uncovered in the fridge for 2 hours. Then let them stand at room temperature for at least 10 minutes before cutting.

Mint Oreo Truffles

  • 1 package of Double Stuff Oreos- Cool Mint Flavor

    • 22 cookies with cream centers

    • 10 cookies with centers discarded

  • 1 package of cream cheese (softened)

  • 1 package of white chocolate bark

  • 1 package of green chocolate bark

Directions:

1. Use a ziploc bag and rolling pin or a food processor to finely crush the cookies

2. Using the back of a large spoon mix the softened cream cheese with the oreos.

3. Roll the mixture into 1” balls and place on a wax paper covered cookie sheet

4. Cover the balls and place them in the freezer for a few minutes. This will allow the balls to retain their shape when you place them in the melted chocolate.

5. Melt the chocolate at directed on the packaging, dip balls into the chocolate, tap off excess chocolate, and place on the cookie sheet.

6. Refrigerate and enjoy!
