Summer DIY
As IB and AP tests are winding down and the weather is getting warmer, summer is quickly approaching. Here are some fun DIY treats to get you ready for summer.
Cookie Dough Ice Pops:
Ingredients: (yield 10 popsicles)
- 2 1/2 cups milk
- 2/3 cup light brown sugar, packed
- couple pinches salt
- 2 teaspoons pure vanilla extract
- 1/4 cup + 1 teaspoon mini chocolate chips
Instructions:
- Place milk in microwave safe bowl for about 1 minute or until warm to the touch
- Stir in brown sugar and salt until dissolved, and then stir in vanilla
- Place ½ tablespoon of chocolate chips in the bottom of a popsicle mold, or dixie cups if you don’t have molds
- Fill to the top with the milk mixture
- Insert sticks and freeze until solid
Watermelon Fruit Bowl:
Ingredients:
- 1 whole seedless watermelon (about 12lbs)
- 10 cups of assorted fruits such as; cantaloupe, honeydew melon, blueberries, halved strawberries, cubed pineapple, diced mangos, sliced kiwis, sliced nectarines and grapes
Instructions:
- Cut a small piece off one side of watermelon. Remove just enough to allow the watermelon to sit flat, lengthwise; be careful not to break through the rind
- Score a line lightly around the top third of the watermelon (this line can be straight or scalloped as shown above)
- Carefully cut through the line
- Scoop out the watermelon from the base (add this to your fruit salad)
- Fill the watermelon bowl with the prepared fruit and serve
Sorbet in Lemon Bowl:
Ingredients:
- Lemons
- Sorbet (raspberry is recommended)
Instructions:
- Cut off the tips of the lemons so that they can sit flat
- Cut the lemons in half, scoop out the lemon, and then freeze the lemon bowls
- Scoop your favorite sorbet into the bowls just before serving
