Lemon Cake

Spring is in full bloom and the weather is warming up. The days are getting longer and the clothes are getting light, so is the food! As Spring transitions into Summer the choices for food become lighter and fresher. This is the perfect recipe for a sweet and delicious dessert, but not heavy and great for this warmer weather.

Lemon Cake Recipe

 

  • 1 cup (2 sticks) unsalted butter, room temperature, plus more for pans

  • 2 1/2 cups all-purpose flour (spooned and leveled), plus more for pans

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 1 tablespoon lemon zest

  • 2 cups sugar

  • 2 large eggs plus 3 large egg yolks

  • 1/4 cup plus 2 tablespoons fresh lemon juice

  • 1 cup low-fat buttermilk

  • 1 lemon, thinly sliced and seeded

Directions:

1. Preheat your oven to 350 degrees, then flour your buttered cake pan (make sure to eliminate the excess flour).

2. In a bowl combine flour, baking soda, salt, baking powder, and lemon zest.

3. In a separate beat butter and 1 ½ cups of sugar, with a mixer until light and fluffy. Turn the mixer to low, add in the eggs and egg yolks, only one at a time. Finally beat in 2 tbsp. lemon juice. Beat in the flour mixture, alternating with the buttermilk. Make sure to begin and end with the flour, and only beat until combined.

4. While the cakes are in the oven, place the remaining sugar and ½ cup of water in a saucepan, bring to a boil. Then add lemons slices and simmer for 25 minutes. Remove the lemons using a slotted spoon, and place them on wax paper. Add the remaining lemon juice to the mixture.

5. Divide batter equally between the two pans, bake for 32-35 minutes, or until the sides of the cake pull away from the pan. Allow the cakes to cool for 10 minutes in the pans, then remove and cool on a wire rack.

6. With a toothpick, poke holes in the warm cakes. With the lemon syrup, brush the cakes, and cool completely.

7. Frost with plain or lemon whipped cream frosting, decorate with candied lemons, and enjoy!
